No party would be complete without cupcakes. By changing the frosting and casing it can be served at kids party or an elegant formal function.


This simple cupcake recipe is one I developed myself while trying to use ingredients that would readily be available in most homes. The result is  easy to prepare moist, scrumptious vanilla cupcakes that will impress your guests.


NB: All ingredients should be at room temperature.



125 g butter or high fat margirine

200 ml white sugar or castor sugar

2 eggs

400 ml (225 g) wheat flour

1 tsp baking powder

200 ml milk

10 ml vanilla essence




Pre heat your oven to 180 ºC.

Cream butter either with an electric mixer or wooden spoon.

Add the sugar and mix well.

Add eggs one at a time with mixing.

Beat in the vanilla essence.

With low speed, beat in the sifted dry ingredients alternating with the milk.

Fill cupcake cases 3/4 full. Bake at 180 ºC for 15 – 20 minutes.

Poke cupcakes with a toothpick to check. If it comes out clean, then it’s done.
